17th February 2016 - Stuffed Chicken

Quick throw down dinner; chicken breasts; butterflied then filled with extra low fat soft cheese, squirt of tomato puree, aubergine slices and pepper strips. Wrapped in foil and baked.

Then served it up with mashed potato, sliced grilled aubergine, grilled pepper and corn on cob.

16th February 2016 - Fishcakes & Sweet Potato

All Laid Out
 So forgot to defrost anything so we had a pack of our reserve fishcakes - this time Thai Salmon flavour!

Served them with baked sweet potato, I had some chilli poppers (needed eating... honest) and I made some green by frying in some spray oil; leeks, a shallot, aubergine and a few chilli flakes - lovely.
Green Stuff
Also made smoothie for my drink today as well as a nice healthy salad. I'm having a salad most days but I'm getting hungry during day (try to take a jam or peanut butter sandwich). Does anyone have any ideas for healthy alternatives other than fruit?

12th to the 15th February 2016

So sorry for lack of activity - totally fell behind but better late than never. On Friday we had a couple of the chicken breasts from Lancaster Leisure Park defrosted so we had them as fajitas (very little oil and spice mix in the chicken and the sauce). Were absolutely lovely especially when I added extra spice to my own.

All Served Up
The tomato sauce was just onions, garlic and tomatoes with passata along with a few herbs and paprika - really easy but really tasty.

Whilst the filling was chicken, onion and pepper strips with some of the spice mix (I know lazy) and served on a sizzle plate.
Slightly burned with lack of oil.
On Saturday night we had turkey burgers with potato wedges but I forgot a picture - sorry. They weren't as good as a good beefburger but had a reasonable amount of flavour.
Then Sunday night (Valentine's) we spoiled ourselves to tuna steaks - did nothing to them just grilled and enjoyed the quality of the fish itself along with rice and grilled peppers.
Bit of lime juice and grated ginger on mine.
Finally last night was a case of reheating the last of Jade's sauce - adding more chopped tomatoes, turkey mince and cook. Maybe needed a bit more umph but all good.

11th February 2016 - Fishcakes

So when we did our shop at Lidl, we did our usual thing of stocking up on fishcakes and decided to have some last night.
 Served it with rice (and sweet chilli sauce) and to mix things up I fried up some onion, garlic, courgette and leek. In all honesty it wasn't great - the leek was meant to crisp up and it really didn't but we live and learn.
In other news want to give Jade a massive congrats on losing 10lbs!!!!! As she says - there is advantages to being ill.

10th February 2016 - Turkey Koftas

Jade's turn. Last night we had homemade meatballs/koftas baked with sliced courgette and aubergine then covered in her tomato sauce (from the 8th) and cooked a bit longer. This time with pasta.

The tray was lined in spinach then the meatballs were laid on top along with the veg slices and tomatoes. Then the tomato sauce (with added harissa paste) was spooned on top and baked for a bit longer.

The taste was good but the meat was a bit plain (as Jade said - "should have put the harissa in the meatballs"). But still good healthy food.
Mine is the one with cheese (it needs eating)
Note to self - really need to get Jade to write up some of these.

9th February 2016 - Smoked Salmon Salad

Busy night tidying the shed and Jade picking up her mum from station led to quick tea. But quick can be tasty and most importantly HEALTHY!!! So time for a food board. Jade's not the biggest fan of salad but here's what I threw together.
As presented
So boiled potatoes, green salad (tomatoes, cucumber, lettuce, spinach, rocket, apple and pepper), bread, gravadlax, boiled eggs, houmous and coleslaw (either or for Jade as surprisingly high in fat). All in all a nice dinner sat in front of telly.

8th February 2016 - Pork Steaks, Rice and Veggie Skewers

Well Balanced Meal
So first official day on here. Jade cooked last night and made Grilled Pork Steaks, rice, corn on the cob, and veggie skewers along with a tomato sauce which is amazing. She's made it a few times and has all sorts of veg in, butternut squash, courgette, spinach, aubergine which is blended into a sauce after cooking. And best thing is there were two portions left to freeze for a later date.

Skewers were a good mix too - butternut squash, courgette, pepper, aubergine and pineapple - lovely and fresh.
